Vindaloo

This dish was inspired by a dish popular with Portuguese settlers in Goa and consists of wine (vin) and garlic (alhoo) with meat, usually pork. Modern Vindaloo recipes will use vinegar instead of wine and may contain plenty of red chilli (the chilli itself was introduced into India by the Portuguese). Like the Madras, restaurants will usually use the word Vindaloo as an indication of strength, usually the hottest on the menu although some restaurants will have the hotter curries Tindaloo and Phaal.
