Tamarind

A fruit often used as a souring agent in curries. It usually comes in a block of pulp which needs to be soaked in water before straining and adding to the curry. It is also available in paste form which is somewhat easier to use.

Turmeric

Turmeric is a plant from the ginger family. The rhizome is dried and ground into a orange-yellow powder. Whilst it does have its own distinctive flavour it is used more to colour food. Oh, and it's pronounced Ter-Mer-Ik not Choo-Mer-Ik as I've heard some people say.

Tawa

A large flat griddle used in Indian cooking often for breads such as Roti and Chapati but is also used for some curries. Some Restaurants will have Tawa curries on their menu, the name referring to the pan it is cooked in rather that any specific flavour.
